Editing multiple transactions
I missed a step when setting up online download for a credit card account.
Now, the category for all my downloaded transactions is a number, pulled from my earlier import from another program.
I tried to edit the transaction, after selecting all the displayed transactions, but only one transaction was altered.
How can I alter or delete the assigned category?

You can use Command ⌘ instead of Control ^ on Mac

To change multiple transactions select the transactions required so that they are highlighted, the standard method for your Operating system to select multiple items is used.
Then Right click and select Batch Change -> Category, select the category to change the selected transactions to.
