Is the check register view customizable?
Can I change the size or boldness of the font, or the color of the background?

You can globally.
Using the Moneydance Menu option File => Preferences go to the Appearance tab.
Initially try the different Themes, if you still want more customization you can use the Customize option to change the colour of various elements.

In the same Appearance tab you can select what font to use, its base size etc.
