Then I edit the amount. If I select Defer Amount, the original
amount stays. If I simply hit "enter" or Enter Amount, the new
amount shows up, but I want to edit the amount and NOT record the
transaction yet; I want it to stay in my Reminders. Is there a way
to do that?</p>

Tools > Reminders, and that is where you want to do the editing.
The list you were using is for entering upcoming reminder
transactions (like when you get your bill, that's where you enter
it from the reminder list).</p>
