How do I edit a stock and change/add the stock symbol

You can use Command ⌘ instead of Control ^ on Mac

Use the Moneydance menu Tools => Securities
Double click on the security. In the Window that comes up click on the edit button next to the security name. The ticker is a field on this dialog box.
