how to enter a transfer from one stock to another
When I readjust my stocks it gets categorized as a transfer from one stock to another. How do I annotate this in MoneyDance?

It looks like you sold units in one fund then used the monies received to buy units in two other funds. So the transactions are a sell transaction and two buy transactions.
So in my view calling it a "transfer" is just wrong, in the real world it cannot be done like that.
The first two transactions should say a type of Buy and the last a type of Sell.
