gifting shares
Is there a way to enter a way to subtract shares and their value. I'm trying to give shares to my grandson. I do not want to download from the web, as I've had a very bad experience in the past. I'd be happy to update my old Moneydance if I could be sure it would let me add and subtract things myself.

I do NOT want to sync anything! Just subtract shares as a gift.

What does downloading from the web have to do with what you are trying to do? Even if you did download Moneydance will not allow you to just remove shares.
Many jurisdictions will impose capital gains in the current year on the difference between the current price and the cost basis when you gift shares, otherwise many would do it as it would avoid a tax liability.
So typically in Moneydance you have to enter a sell at the current market value so the transaction is recorded correctly and it removes the asset value from Moneydance.
You are transferring the value of the asset in kind to your grandson by giving him the shares but in your own records you have to remove the value of the asset itself.

"Short cuts" rarely work properly in finance software, especially Finance Software that follow accounting principles. Quicken allows add and remove shares as it does not follow accounting rules.
