No Appearance Tab
I am running Version 2021 and there is no appearance tab under File ->Preferences or File ->Preferences -> General.

You can use Command ⌘ instead of Control ^ on Mac

I'm a fellow user.
Appearance tab was introduced in Moneydance 2021.1, so it suggests that you may have 2021.0. The later release is available from:
https://infinitekind.com/download_2021
