Can you associate a payee with a default category, e.g. a grocery store with the category groceries?

I'm a fellow user.
The short answer is no.
Moneydance uses an algorithm that over time with the confirmed transactions in register will learn to correlate a particular payee with a particular category and offer that as the suggested category when entering a new transaction.
