How do I remove a column, Payment Rate?

You cannot remove columns, and it would not make any sense to remove this column in any case since it would mean you could never have any payment/withdrawals.
You can turn off the second line in the transaction register by right clicking and selecting single line mode.
It is not possible to remove specific fields.

Ahh, apologies I see what you mean now.
That number means that the category "Adam" is in a different currency to the cheque account, hence to post the other side of the transaction requires an exchange rate conversion, the fields are showing this conversion.

Did I make a mistake when I set up the data transfer because there’s only
one currency, CA $. How can I fix it?

Check what the base current of the entire account set is, this is done through the menu option Tools => Currencies
You can check the currency of the Category through the menu item Tools => Categories, select the category then click on the Edit button.

Look please! The category Adam is set to US Dollar and even when I click
edit, I can’t change it. What’s wrong?

That is what I expected you would find.
Moneydance itself will not allow you to change an account/category's currency once it has one or more transactions in it. This is a failsafe mechanism to avoid what could be serious problems.
It will be necessary to force the change then fix the transaction.
The force the change you will need to go into the Extensions menu, then Manage Extension and install the Toolbox extension.
After installation, start Toolbox, select Update Mode at the top of the Toolbox Window.
Select the Account/Category menu.
Scroll down and select Force change an Account/Category Currency then click on Proceed
You will get various warnings as you go along, this is expected.
Select the Category, then move to select the currency and change it.
After this has been done you will need to go back and correct the transaction. This process just changes the currency of the category itself, it will not rework any of the transactions.

Should I reinstall Moneydance and upload the quicken file again but before
I do that, you need to tell me how to set up the currency in CAD from the
beginning? Is this possible?

Generally the best reports to use for Tax preparation are the two Income and Expense reports. In parameters select the time period and the categories required.
You can also mark selected categories as tax related for a long term short cut.
You can also memorize these reports under a suitable name so they are permanently present and can be run each year.
As Moneydance is used World Wide there are no predefined tax reports as every country is different.
