Hi
Good, can see all that but is it best to set a 'Base Currency' with a new
currency before creating an account as it appears greyed out now and
reading further, due to an account already created it won't change?

You should set your base currency when you first start an account set.
What should your base currency be?

The base currency is the overall currency to be used throughout the account set, by default it applies to all accounts and categories, unless specified otherwise. You can then set up accounts in specific currencies as required.
As you are in Australia I would expect that your base currency should be AUD.
