It has been my experience that the nomenclature of securities has no effect on Moneydance. I often shorten their names for convenience.

The Ticker is what's important.

You can, of course, correct the name if you inadvertently misspelled it.

Where do I go to change the name?

From the MD menu bar, go to Tools > Securities.

From the resulting list, double-click on the security in question.

In the upper, right-hand corner of the resulting 'History' window, click the 'Edit' button.

Here you can edit the security name.

Look to the following Moneydance KB article for reference to the purpose of the various fields.
(Note: The Decimal Field is only offered during the creation of a security.)

Does the name change everywhere it appears?

It will effect the name in most cases. The one area that comes to mind that it likely will have no effect is in the 'Description' field of any given transaction - as those entries are typed in by the user.
