Sales/VAT tax stripped or not

We are a charity and are eligible for a rebate on the sales tax. Once I have entered a transaction and the 'cash register' sounds, it shows the full amount with a split transaction, the second being the Sales/VAT tax stripped off. Fair enough. But when I try to trace all the payees in the 'Income & Expenses' panel, ONLY the net amounts shows up, not the full amount with tax included. How can I generate reports with the full amount of the written cheque, tax included?
