Creating a back up or saving a file
I find saving a current file a little complicated
What is the best and safest way?

Perhaps you can tell us what you are actually doing now?

Moneydance does progressive save about every 20 seconds, so you are generally not doing explicit saves.
You have two options for backups.
You can create an on demand backup whenever you like by using the Moneydance Menu path File --> Export Backup.
You can also set Moneydance to create a backup every time it exits by setting the preferences on the Backup tab of File --> Preferences
