Editing Transactions & Chaning Cheque# Details
I can't find a reference in the Help facility to modifying a transaction once it has been entered in the register. Also, I can't find a way to change the categories in the Chequ# columkn.

Double-click to open a transaction, that is - place it into an edit mode. Then you can change any fields you want.
With your top-level ("home", 'My Finances') account open, use Account > Edit Account to edit the Check# items. (This is a favorite to win the most obscure feature caegory.)
