A transfer sale sounds like selling some securities and transferring funds elsewhere which is a SellXFR action type in the Investment account.
If you mean something else please elaborate.

Hello
In fact, I would like to be able to break down the results of a sale transaction into several accounts.
Example:
I sell 7 shares for a total of $150
In the same transaction, I would like to break down the amounts as follows:
Bank: $80
Federal tax: $35
Provincial tax: $25
Health insurance: $10
All in one transaction, repeated every month

You could not do it in one transaction.
A security sell transaction is quite different from a bank funds distribution type transaction. A sale transactions just does that, you can combine it with moving the proceeds of the sale to another account in the one transaction but that is the limit.
In the real world this would have to be at least two if not multiple transactions, in Moneydance it can be done in two transactions just not in one.

Incomes : last year.
and
Expenses last year
instead of last 365 days

There are last year options in the Income and Expense reports, you have not told us what the screen shot relates to
