how can I list an expense to be paid without immediately deducting from the balance? then later actually pay the expense and deduct?

Hi Mike,
If you go to Tools --> Reminders, you can create a 'Transaction' reminder. This can be scheduled for a future date, and can a one-off or a repeating payment. These transactions can also be entered into the register manually or automatically.
You can view the 'Reminder Calendar' on the Summary page, by selecting 'Reminders' in the sidebar, or within Tools --> Reminders. The calendar will show all reminders - confirmed, overdue and pending.

There are a number of approaches you could take, for example you could carry it as a cash balance in your brokerage account.
What a lot of people like to do is create a security that represents this Money Market account, add it to the investment account, any deposits and withdrawals from it are handled as buy and sell transactions at a fixed price - usually $1. Interest received is entered as a Dividend with a suitable Interest category being used to record it.
