Currencyies issue
Hello,
I just bought the software after many years of using Quicken.
When I migrate my Quicken data and import it into Moneydance, I specify my default currency which is not Dollars.
When I start the import, it asks me of each account's currency. The list of currencies it offers at that point is VERY limited, and I do not see at that time any option to select another one.
Please help

You need to add what currencies you will be using to Moneydance's summary page.
This was the Developer's workaround to deal with some issues around having a scrollable list.

It also looks like if I set a default currency to a specific one, I
cannot change it to another currency.
Am I right?

I'm a fellow Moneydance customer.
Not really, but there are implications.
The Default currency sets the initial currency of all accounts and categories, it is also the currency of any accounts created in the future if you do not explicitly set them.
If you change the default currency it will NOT change the currency of any existing Account or Category, only set what currency future created accounts will be in.
The default currency determines what currency reports are displayed in at the totals level.

OK, great. It sounds good, as sometimes I want to see my net worth in
Dollars, and sometimes in Israeli Shekels
